For decades, the prevailing wisdom has held that consuming more sweet foods leads to a heightened preference for sweetness, contributing to overeating and potential health problems. To address this gap, Dr.de Graaf and his team designed a rigorous, randomized controlled trial. The study’s strength lies in it’s methodology: a pre-registered, ethics-approved protocol was followed with unwavering adherence. crucially, sweet taste preferences were measured using a validated approach employing specifically developed foods and drinks separate from the intervention diets themselves, minimizing potential bias. How the Study Worked: A real-World Approach
The study involved 180 participants, divided into three groups.For six months, each group received bi-weekly deliveries of food and drink packages constituting approximately half of their daily caloric intake. The groups were assigned diets categorized by sweetness levels:
High Sweetness: Included foods like jam, milk chocolate, sweetened dairy products, and sugar-sweetened beverages.
Low Sweetness: Focused on foods like ham, cheese, peanut butter, hummus, salted popcorn, and sparkling water.
Mixed Sweetness: A combination of both sweet and non-sweet options.
Participants were provided with daily menus as guidance, but were allowed to consume as much or as little of the provided food as they desired – mirroring real-world eating patterns. The researchers meticulously categorized foods based on sweetness, leveraging data from a prior study that assessed the taste intensity of 500 commonly consumed Dutch foods.
The Surprising Results: Sweetness Doesn’t Dictate Intake
The results were striking. Throughout the six-month intervention, and during follow-up assessments at one and four months post-diet, researchers observed no significant changes in participants’ preference for sweet tastes, regardless of their assigned dietary group.
“We also found that diets with lower or higher dietary sweetness were not associated with changes in energy consumption or body weight,” Dr. de Graaf stated. This finding directly contradicts the common assumption that sweet foods inherently lead to increased calorie intake.
Furthermore, the study examined a range of physiological markers – body weight, body composition, blood glucose, insulin levels, and cholesterol – and found no correlation between sweetness intake and changes in these indicators of metabolic health. Participants naturally reverted to their baseline sweet food consumption levels after the intervention ended,suggesting that the dietary manipulation had no lasting impact on their preferences.
Why This Matters: Re-Evaluating Our Relationship with sugar
This research has significant implications for public health and dietary recommendations. “This is one of the first studies to measure and adjust sweetness across the whole diet within a realistic range of what people actually consume,” Dr. de Graaf emphasizes. “This matters because some people avoid sweet-tasting foods, believing that regular exposure will increase their preference for sweetness – but our results show that’s not the case.”
The findings suggest that factors beyond dietary sweetness play a more significant role in shaping our food preferences and overall calorie intake. These factors could include genetics, psychological influences, learned behaviors, and the overall palatability of food.

The research team is now planning to extend this investigation to children, recognizing that taste preferences are especially malleable during development.
