Chapter Italia launches the 82-key Chapter Chianti in a restored 17th-century borgo
Chapter Italia has officially opened its second boutique hotel, Chapter Chianti, marking the brand’s first expansion beyond the city following the success of Chapter Roma. Situated in the heart of the Chianti hills, the 82-key retreat is housed within a restored 17th-century borgo, or historic village, set among a natural amphitheatre of rolling vineyards and more than 3,000 olive and cypress trees. The property spans over 50 hectares of landscaped gardens and olive groves, offering a fresh, contemporary take on the traditional Italian agriturismo.

Marco Cilia adapts the Chapter Roma philosophy for a countryside social retreat
The vision for the project was developed by Marco Cilia, owner of Chapter Italia, who sought to bring the brand’s signature energy and social spirit to the countryside. “Following the success of Chapter Roma, we wanted to take the Chapter philosophy beyond the city and show that contemporary design and authentic Italian hospitality can thrive anywhere,” says Cilia. “Tuscany has incredible countryside resorts, but many felt too quiet, too expected. We set out to create a place where you can unwind completely or let your hair down, sometimes both in the same day. Chapter Chianti is about giving guests the freedom to experience Tuscany their way, whether that’s a sunrise yoga session or dancing after sunset.”

The interiors were conceived by acclaimed interiors architect Tristan du Plessis, who aimed to balance modern luxury with a deep respect for the estate’s history. The design celebrates texture and materiality, layering neutral tones with rich greens and earthy hues. Original stone staircases and vaulted ceilings have been carefully preserved, while clean architectural lines and local stone and marble are complemented by handcrafted furniture from neighbouring workshops. The space also features custom lighting from DCW Editions and Marset, along with hand-drawn artworks by emerging artists, which appear throughout the property, including on the ceilings of the signature restaurant and even concealed beneath the swimming pool.
“The challenge was creating something bold and modern in a region defined by tradition, without losing its soul,” explains Du Plessis. “We wanted the old and new to coexist in dialogue. The result is a space where the passage of time is visible but not frozen, a historic village transformed into something radically current, yet timeless.”

Culinary Offerings and the F.A.R.M Social Spa
Chef Daniele Auricchio debuts the Osso restaurant and F.A.R.M Social spa facilities
The culinary program is led by Neapolitan-born chef Daniele Auricchio, who brings experience from Michelin-starred kitchens worldwide. The signature restaurant, Osso—named after the Italian word for bone—champions meat-centric Tuscan cooking and locally sourced produce, supported by a 120-bottle wine list. By day, the Parasole Pool Bar offers Mediterranean-inspired light bites, while the Main Bar serves as a hub for cocktails and live entertainment. In 2027, the dining offering will expand further with the arrival of Hey Güey, the Mexican restaurant originally established at Chapter Roma.

Wellness is a cornerstone of the resort, marked by the debut of the brand’s spa concept, F.A.R.M Social. The facility includes a Turkish steam bath, a sauna, a dry hammam, and a fitness centre, complemented by an outdoor padel court. The indoor pool circuit features five distinct pools, including warm pools, two cold plunges, hydrotherapy, and salt pools, alongside three dedicated treatment rooms.
Strategic Positioning and Future Growth

Chapter Chianti is positioned as a destination for travellers who find the classic Tuscan countryside stay too sedate, including SME owners and frequent flyers looking to combine business trips to nearby Florence with leisure. The opening reflects sustained investor confidence in the region, joining other significant developments such as the Auberge-operated Collegio alla Querce in Florence and Corinthia’s resort at Borgo di Perolla.
Looking ahead, the property is scheduled for further expansion in 2027 with the addition of The Mansion. This five-bedroom villa will be available for individual or private hire, featuring its own outdoor swimming pool and a private butler and chef on demand, while providing guests with full access to all facilities of the main hotel.
