The FASFC gives some tips to keep it safe when cooking with eggs. “Raw eggs can be contaminated with bacteria such as salmonella. For people at risk, consuming dishes based on raw eggs such as fresh mayonnaise, chocolate mousse… is therefore not recommended.”

People at risk include small children, older people, pregnant women and people with reduced resistance. However, when eggs are boiled or fried, the risk of salmonella contamination decreases. The bacteria are then killed.

The FASFC recommends breaking eggs into a separate bowl each time. If the egg is spoiled, you can throw it away immediately without ruining the rest of your dish.

It is also recommended to remove the bowls from your worktop as quickly as possible. “And even from the kitchen. This way you avoid other ingredients becoming contaminated with any bacteria that may be present.”
