Beyond “Ultra-Processed”: Why How We Think About Food Matters More Than You Realize
For years, the debate around “ultra-processed foods” (UPFs) has dominated nutrition discussions. Headlines scream about their dangers,and policies are being considered based on simply categorizing foods by how they’re made.But what if focusing solely on processing is missing the bigger picture? Our research, drawing on both nutritional science and the psychology of eating, reveals a surprising truth: how we perceive food – it’s taste, texture, and even our beliefs about it – is just as, if not more, influential on our eating behavior than its level of processing.
This isn’t to dismiss concerns about some UPFs. Many are calorie-dense and contribute to unhealthy dietary patterns. Though, a blanket condemnation based on the NOVA classification system – a widely used method grouping foods by processing extent – is a blunt instrument that risks oversimplification and possibly counterproductive policies.
understanding the Science of Overeating: It’s Not Just What’s In the Food
Our team at the University of Leeds has been investigating the complex interplay between food characteristics, perceptions, and eating behavior. We analyzed a wealth of data, examining nutritional content (fat, sugar, fiber, energy density), NOVA classification, and crucially, how people perceived foods – were they sweet, fatty, healthy, or processed?
Some findings were predictable. People naturally gravitate towards foods they enjoy and calorie-dense options are more likely to trigger overeating. But the real revelation came from the power of beliefs and perceptions.
We discovered that nutrient content does matter – high-fat, high-carb foods were rated as more enjoyable, while low-fiber, high-calorie foods were perceived as more prone to triggering ”binge-eating” tendencies. However, what people believed about the food had an equally notable impact.
Foods perceived as sweet, fatty, or highly processed were more likely to lead to overconsumption, regardless of their actual nutritional profile. Conversely, perceptions of bitterness or high fiber content had the opposite effect, curbing appetite.
In fact, our models showed we could predict 78% of the variation in people’s likelihood of overeating by combining nutrient data (accounting for 41% of the variation) with beliefs about the food and its sensory qualities (contributing another 38%).This underscores a critical point: how we think about food profoundly influences how we eat it.
The NOVA System: A Limited Predictor
This led us to examine the predictive power of the NOVA classification itself. Surprisingly, once we accounted for nutrient content and food perceptions, the NOVA classification explained less than 2% of the variation in liking and only 4% in overeating.
This isn’t to say UPFs are harmless. Many are undeniably problematic. But the NOVA system lumps together vastly different products – from sugary sodas to fortified cereals, protein bars to plant-based meat alternatives. Some of these may be less healthy, but others can be genuinely beneficial, especially for vulnerable populations like older adults with reduced appetites, individuals on restrictive diets, or those seeking convenient nutrition.
Why a “Bad UPF” Label Can Backfire
The message that all UPFs are “bad” is a dangerous oversimplification. People don’t make food choices based solely on labels. They consider taste, how the food makes them feel, and how it aligns with their health, social, and emotional goals.
relying heavily on UPF labels to guide policy could have unintended consequences. Warning labels might deter people from consuming foods that are actually helpful, like whole-grain cereals, or create unnecessary confusion about genuinely unhealthy options.
A More informed,Personalized Approach to Healthy Eating
Instead of focusing solely on processing,we advocate for a more nuanced and effective strategy built on three pillars:
* Boost Food Literacy: Empower individuals to understand what makes food satisfying,the drivers of cravings,and how to recognize their personal cues for overeating. Knowledge is power, and understanding the psychology of appetite is crucial.
* Reformulate with Intention: Food manufacturers should prioritize designing products that are both enjoyable and filling, moving beyond bland “diet” options and overly palatable, addictive snacks. Focus on creating foods that naturally promote satiety.
* Address Eating Motivations: Recognize that people eat for reasons beyond physical hunger – for comfort, connection, and pleasure. Supporting alternative coping mechanisms and maximizing enjoyment within a healthy framework can reduce reliance on low-quality foods.
