The Rise of ‘Dark Kitchens‘: A Growing Trend in Food Delivery
The food delivery landscape is undergoing a meaningful shift with the rapid growth of “dark kitchens” – delivery-only food businesses lacking a conventional storefront.A recent university study reveals that 15% of all online food retailers in England now fall into this category, representing one in seven businesses on major platforms like Deliveroo and just Eat.
Also referred to as “cloud,” “ghost,” or “virtual” kitchens,these operations capitalize on the increasing demand for food delivery services. Though, their relatively new emergence has presented challenges for regulation, food safety, and consumer transparency. Until now, a standardized definition has been absent, hindering effective oversight.
Researchers from multiple universities, commissioned by the National Institute for Health and Care Research, have established a formal definition: “Technology-enabled commercial kitchen(s) operating primarily for delivery, to fulfil remote, on-demand, consumer online orders of food for immediate consumption.” This unified definition is a crucial step towards clearer communication and more effective regulation.
The study highlighted potential public health implications. Unlike traditional takeaways subject to spatial planning policies, dark kitchens operate with less visibility. This raises concerns about the potential to undermine efforts to promote healthier food environments, particularly around schools. Furthermore, the shared kitchen spaces can pose risks related to food safety and allergen cross-contamination, as consumers may be unaware of the preparation habitat.
While offering benefits like lower operating costs and location versatility,the rise of dark kitchens necessitates increased scrutiny. A recent survey indicated that while awareness of dark kitchens remains low (25% awareness,9% knowingly used one),over half of consumers would consider ordering from them if explicitly identified as such.
The new industry-wide definition aims to bring these delivery-only hubs under stricter regulatory oversight, improving inspection processes, and enhancing consumer understanding.
