A Taste of Home: Slow Cooker Chicken Adobo – A Family Tradition
chicken Adobo is more than just a recipe; it’s a comforting embrace of family, heritage, and the simple joy of a delicious meal. This version, adapted for the modern kitchen, honors both tradition and convenience. it’s a dish that speaks to my own history, stemming from my grandmother’s marriage to a Filipino man, and the warmth he brought to our family gatherings.
This slow cooker method allows the flavors to meld beautifully, creating a deeply savory and satisfying experience. Let’s explore how you can bring this taste of home to your table.
What is Chicken Adobo?
Adobo is considered by manny to be the unofficial national dish of the Philippines. At its heart, it’s a braised dish typically made with meat (chicken and pork are most common) marinated in vinegar, soy sauce, garlic, peppercorns, and bay leaves. The beauty of adobo lies in its versatility - every family has their own unique take.
Why Use a Slow Cooker?
Traditionally, adobo is simmered on the stovetop. However, utilizing a slow cooker offers several advantages:
* Enhanced Flavor: The long, slow cooking process allows the flavors to deepen and intensify.
* Convenience: Simply combine the ingredients and let the slow cooker do the work.
* Tender Chicken: The slow cooker ensures incredibly tender, fall-off-the-bone chicken.
* Modern Adaptation: Embracing new technologies while honoring traditional cooking methods is a practice rooted in many cultures, including my own Native heritage.
The Recipe: Crock Pot Chicken Adobo
Here’s what you’ll need to create this flavorful dish. Don’t be afraid to adjust quantities to your liking – adobo is forgiving!
Yields: 6 servings
Prep time: 15 minutes
Cook time: 2.5 hours (on high)
Ingredients:
* 1 package (approximately 6) chicken thighs and/or drumsticks. Bone-in, skin-on pieces deliver the richest flavor, but boneless, skinless thighs work well too.
* ½ cup vinegar. White vinegar or apple cider vinegar are both excellent choices.
* ½ cup soy sauce.I recommend Kikkoman’s dark soy sauce for a richer colour and flavor.
* 1 (14.5 ounce) can chicken broth. Low sodium is preferred, given the saltiness of the soy sauce.Water can be substituted if needed.
* 3-5 cloves garlic, minced. Don’t skimp on the garlic – it’s a key component of the flavor profile!
* 2 shallots, coarsely chopped. Any onion will work if you don’t have shallots.
* 3 bay leaves. These add a subtle but essential aromatic depth.
* 1 tablespoon black peppercorns. To avoid biting into whole peppercorns, place them in a tea steeper or cheesecloth bag.
* 2 tablespoons sugar.Granulated or brown sugar both work. You can omit this if you prefer a less sweet adobo.
instructions:
- Combine all ingredients in your slow cooker.
- Cook on high for approximately 2.5 hours, or until the chicken is cooked through and tender.
- Serve hot over white rice.
Serving Suggestions & Finishing Touches
Traditionally, adobo is served with a generous helping of the flavorful braising liquid.
* Thickening the Sauce: For a thicker sauce, strain the cooking liquid into a saucepan and whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water). Heat over medium heat until thickened.
* Garnish: A sprinkle of chopped green onions adds a fresh, vibrant finish.
* Side Dishes: Steamed vegetables, such as bok choy or green beans, complement the richness of the adobo beautifully.
